Hi guys I was looking through the old Stronghold Builders Guide and I was wondering if there is anything I can use as an updated to 3.5 to work with for designing strongholds at the scale of lets say Lord of the Rings something like Isengard(sp?).

There aren't any updated rules. Just additions, found in various supplements (Frostburn, for example).

I would think that, even if Stronghold Builder's Guide is 3.0, it's as good as 3.5 for almost everything in it (except for anything that is tied to something 3.0-only, but that can be easily changed).
Just use the book as is, it shouldn't make any difference, and can certainly fetch you something like Isengard (Just up the number of stronghold spaces until you're happy).

I'm not aware of any updates, but so little of the book is 3.0-specific that it more or less carries straight across. About the only things you might have to change are specific spell effects, but even most of those aren't 3.0-specific.
