How much would a profesional assasin get paid to knock somebody off?

It depends a lot on the details of the job, most notably: who?, also important: how?, and then other details too of course.
If your gonna wack the King of some nation, your gonna be paid 1000's of gp as a minimum. And not 2-3 thousands, MANY thousands. And if your supposed to frame some other country for the deed, tack on a few more thousand.

On the other end of the deal, if your suppsoed to kill Joe the bartender cause he was hitting on the daughter of the leader of the Thieves Guild, and it's supposed to be nice and messy, public and everyone is supposed to know, your probably not gonna make more than 200-300gp.

And remember it's not always about the cash, an Assassin's reputation is just as important, if not more so. Depending on the character, you might want the reputation of "Mr anonymous", no one knows who he really is, and only a dozen people know how to hire him(hang a blue cloth in the tree east of the bar in the village of Dullsville). Or you could be the famous "in-the-public-eye" assassin that no one messes with.

I'd go with something like 100 gp/NPC class level, 150 gp/PC class level

+250-500% for target being major character (king, PC, high clergy, etc).

+75% per extenuating circumstance (target in prison, need to frame specific person, etc).

It depends on who it is: A poor bartender in an unknown village? 40 gp sounds reasonable for that.

The mayor of said village? 100 - 300 gp

The captain of the guard in a large city? 1000 gp due to the difficulty of the job.

The king of country? 10 000 gp maybe.

Edit: Other factors need to be considered as well, is it a high magic world? In that case you might consider making the pay much higher as the guard will probubly employ magic to find the wrongdoer.

I would say 100gp x (HD of target + Levels in Assassin)

Modifiers to HD of target include:

Has personal guard: + the total CR of total guard added to target HD
Is unusually famous: +2
Is a government official: +1 for a minor position, +3 for a major position, +5 for a king or similar station.
Has underworld connections: +1-5 (Depending on the involvement)
Is loathed by the local area: -2 (Due to less expected investigation)
Is to die in a specific way (painlessly or PAINFULLY): +1
Has to look like an accident: +1
Has to look like someone specific (besides the assassin) did it: +2
Has to look like an organization did it: +3 (the organization will launch investigation most likely)
The target is unusually easy to kill (old/diseased/child): -2
Target is an innocent: +3 (or less depending on the assassins sadism)

Of course, every assassin may be different and can add his own modifiers. Perhaps some will ask double to kill their own race. Some may flat out not kill children. Some may favor killing women and ask for less from them.
