They should be able to handle almost CR 9 encounters. They have as many levels as a level 8.75 party.

I suggest using an Encounter Calculator such as this one (http://nazaire.home.insightbb.com/calculator.htm)

Others are out there, just look on Google.

They are incredibly helpful, I use them all the time and you don't have to be online, just save the page.

Using any of a number of these wonderful beasts, the Effective Party Level of 7 5th level characters is 6.6, so CR 7 is an appropriate challenge.
