This is probably one of the most newb questions ever, but im kinda new to DMing and i play AD&D (advanced dungeons and dragons) 2nd edition. And in the monster manual it has the Hit dice for some, the hit points for some, or both. But most of the monsters dont have the hit points for that animal at all, just the hit dice. Im trying to figure out how to calculate the HP. Any help would be nice.

In AD&D2 (IIRC), all mosnters and animals use 8-sided hit dice. Roll the animal's HD to get its hp total (or just take the average: 4.5 hp per HD). If the animal has a "+x" after it's HD (such as 2+2), that's the number of extra bonus hp it gets.

Example: A 4-HD animal. Either roll 4d8 (for a total of 4-32) or simply take 18 (4.5 x 4).

Since you're the GM, you can always just decide how many hp an NPC or monster has, within reason. For instance, a typical ogre might have 18 hp (4 HD, again, IIRC), so you can give the ogre chief 25 hp, just to make him tougher. Don't go crazy with this, and you should be fine.

Speaking as a 2e vet, I can confirm what Talisman said. X+Y means Xd8+Y hp.
