I don't see any listing here in the books where they don't suffer from nonlethal damage, but I honestly can't think how on earth any elemental would be able to be KO'd.

After doing a little research, it looks like elementals are not Immune to non-lethal damage.

Is there a rule for things that are not subject to crits be immune to subdual?

Elementals have organs, just like other creatures do. They're just made of elemental stuff instead of flesh and bone. So, technically, you could give an elemental a concussion (or the equivalent).
