If an NPC casts hold person successfully on a player, and then the other PCs kill that particular NPC, is the victim still held?

Normally, if the spell does not have a duration related to concentration, it should run its normal course.

Spells with a fixed duration still have that duration. I think spell-like abilities fail when the creature dies though .... not sure on that.

Anything with a duration independent of it's caster's actions maintains it's duration regardless of the condition of the caster. Though remember that the subject of a hold person gets to make a new save each round on it's initiative.
