I am currently playing an LE rogue that has led a rough life and will soon be traveling in the company of a paladin. I want him to see the error of his ways, but not just have a random/sudden/magical alignment change. I'm looking for some good ideas to make the change gradual and believable.

Does he have any close family of friends?

If one of them is or becomes good, or even Neutral, they could work him until one day, something happens that profoundly influences him, and he becomes neutral.

Death of a loved one in defence of the innocent is always a good one.

Perhaps your LE rogue, after seeing how others who are more than self-interested tend to die, even at the hands of their "friends". Having good friends is a bonus but he may also realize that he cna't be all that self interested as well as why would they trust him?

In a case for my character, he started NE at 1st level but was on his way "up" the path of righteousness and ended up NG by 9th level when he did things not for himself but for others.

Perhaps your rogue can learn that being self less not only makes you feel good inside but he also learns that he becomes more trustworthy. When he does that, he gains more trustworthy friends and in a world of monsters, real evil and the like, that is worth more than the extra few trinkets he'll get get by just thinking of himself.

Shifting from Lawful Evil to Lawful Neutral shouldn't be too hard. You'll regularly come up against conflicts between your ambition and your duty/honor/code. Just keep letting ambition lose those conflicts and your DM will probably rule appropriately.

The "rough life" part sticks in the mind, you know? This you might have to talk about with the DM, but if you saw a person that reminded you of yourself as a hard-luck youngster, that could start you down the path to good (or neutrality).

The character probably wont just suddenly see the errors of his ways while he sleeps, something or someone should do that for him...Like a paladin maybe...
Let the paladin earn his title as paladin, let him sway you toward the good sides either through his time spent preaching or just by setting an example of how a truly good person acts. Maybe, after seeing how the common people adore and respect this man might help to sway you...
Or else let some dramatic or traumatic life-changing event slowly start to sway you, even death...I always roleplay characters differently after they are brought back from death - that should be a life changing experience. But a life-changing experience shouldn't just bite you on the rear one night.

Your rogue finds out that he has a child with an old romance and decides he wants to be the kind of person his son/daughter can be proud of.

other than that i'd go with the other suggestions about letting the pally be an influence and get your rogue to see the light.
