I can't figure out how to exactly work one of these. Animals usually have d8 hit dice, but how do i decide how much it starts with, cause some start with like 2d8 and 3d8 in the back of the monster manual. And also for Str, Dex, and other stats do you just use the ones listed in the monster manual?

I believe the Animal Companion section declares them as generic for their type. So...

1. Pick your animal (Use the MM entry)
2. Adjust Stat-block based on your class abilities (Str, Natural armor, etc) for the animal companion.
3. Increase their Hit Dice as indicated by the Animal Companion table (there are HD advancement tables in the MM), as well as adding on any bonuses.

Note that they'll get feats and skills based on HD advancement. I believe the player should get to choose them, but ask your DM.

Ok, so do i start with the number of dice the MM says (ex. a wolf has 2d8) and then for each HD just add 1d8?

Yes, I would think so.
