I know there are ways to become immortal. (Turning into a lich for example) But the problem with that idea is that I'm not evil... What is a good non-evil way to stop aging?

Well, you could try becoming a saint...

Or, if that doesn't work, you can make the trek to the outer planes a little earlier. Go somewhere without ageing.

I think Libris Mortis has rules for becoming a good Lich: someone who isn't evil, but nonetheless isn't ready to quit yet.

My Wizard is currently thinking about the same issues. He has concluded that there are two ways to become "Immortal":

1. Not die.
2. Leave works or deeds so great that you will never be forgotten. Homer is dead, but immortal. Newton is dead, but immortal. Same goes for the Pharoahs. My Wiz has decided that the best way to immortaility is to form the largest library/university in Faerun, then train generations of Archmages in his stead.

Of course...he might not want to die, either...just to make sure his works don't get messed up in the future...sure, that's why...:D

So:

1. There is indeed the Archlich option from Monsters of Faerun; good or neutral Lich.

2. If you're in FR, and a devout follower of your deity, you could always petition to become a Chosen. Chosen of Mystra, at least, don't age.

3. If you're Psion, you can True Mind Switch your way into an immortal body, or just one that is much, much younger (like an Elf). Alternately, if you know a Psion and you're REALLY nice to them, or you've got one Dominated or Geased, you could do a three-way swap to get you into an immortal body:
a. Psion switches with target.
b. Psion switches with you.
c. (optional) Psion switches back into original body.
Only good if they're willing to sac all that XP (30,000! Holy crap!) You'd have to both be epic levels, or save up a bunch of XP and not level. You'd also probably lose 30,000 XP in payment to the Psion (like granting 6 Wishes). Also, when your original body dies you'll lose a level (small price to pay!).

4. Deific ascension is always a good way to go.

5. There's a mushroom in the Dungeon Rappan Athuk that deages you 1d100 years (already kind of dicey). The only problem is it doens't regrow for 1d20+80...eventuallly the law of averages will leave you negative years old (or a toddler in the world's most vicious dungeon) or you'll die of old age.

Consider asking your DM to allow further adventuring after death, in whatever afterlife your character is destined for. I.e., you die; and your god (if you're high level) or his representative comes up to you and says, "Hey, you did some pretty cool stuff while you were alive; want a second chance? I need some errands run..." Et cetera.

There must be some artifacts lying around to do exactly that (ok, maybe not lying around, but they will, once you have blasted the former owner). Other than that in the FR there's the precedent set by Ioulaum's Longevity, a 10th level spell in Netherese times, that would stop aging permanently. Be sure not to get it disjoined or anything, though. It would probably translate to an epic spell or some ritual with massive XP cost.

You could always become an outsider by either template like a shade(FR), shadow walker(UE), or mineral warrior(underdark) or through one of many prestige classes elemental savant, .......ect. lichdom is not the only way to go.

You could always try combining permanency and contigency on a stasis effect spell, so that when a command word is spoken, you are released from your slumber. Obviously, the command word would be tightly guarded, and only given to descendents of the group.

I'm not sure if it works, but it seems a reasonable epic spell to me.
