I do not think they stack, but because I am generous I would let the PC take the higher calculated value and use that.

 

If you want to be ungenerous, make the PC use whichever feature was from his L1 class, ignore the other.

Player's handbook, page 14, tells all about how to figure out your AC that ever needs to be known.

 

If you have multiple features that give you different ways to calculate your AC, you choose which one to use.

 

As such, a barbarian/draconic sorcerer would choose either 10 + dexterity modifier + constitution modifier (from Unarmored Defense), 13 + dexterity modfiier (from Draconic Resilience), or the AC calculation of any armor they choose to wear.
