Boss Fight for 3rd level PCs

I'm tinkering with a new campaign, and I cooked up this boss fight for a group of four 3rd level player characters (all experienced with D&D and mostly competent with tactics and such).

 

How does it look? Is this balanced, too easy or too hard?

Medium humanoid (human), neutral evil

Armor Class 11 (16 with barkskin)

Hit Points 27 (5d8 + 5)

Speed 30ft.

Spellcasting. Gargamel is a 4th-level spellcaster. His spellcasting ability is Intelligence (spell save DC 12, +4 to hit with spell attacks). He has the following spells prepared:

Cantrips (at will): mending, poison spray, produce flame

1st level (4 slots): entangle, healing word, longstrider, thunderwave

2nd level (3 slots): barkskin, heat metal

ACTIONS

Ladle. Melee Weapon Attack: +2 to hit, reach 5 ft., one target. Hit: 3 (1d6) bludgeoning damage.

 

Scruple

1st level (3 slots): grease, ray of sickness, unseen servant

Keen Hearing and Smell. Azrael has advantage on Wisdom (Perception) checks that rely on hearing or smell.

Hit: 5 (1d4 + 3) piercing damage.

Depends on what the pcs have already encountered, and which spell your baddie uses first.    If the pcs get entangled, it could turn out to be pretty tough.  

 

Other than that, I'd keep a few reinforcements in my back pocket if it looks like your boss is having trouble.

I really would have thought you would have given Gargamel the Englarge/Reduce Person spell. Or made him and his cohorts a size larger. =P

A mad CN bard based on Pewit wouldbe a great way to test their mental endurance.

 

Underwater adventures with aquatic gnomes based on the snorks would be a great follow-up.

 

Are you are willing to go outside of Payo's cannon, if so what are your golden range of years for Saturday Morning Cartoons.

 

Personally, I keep meaning to develop  villain based on Venger from the D&D cartoon, as I am the only one in my group of the right age to have enjoyed it as a kid.
