I made a warhammer out of a talon from a Green Dragon. Would the stats be the same as a normal warhammer or...?

that depends, on the table for magic item creation they have lots of neat little effects for what is something made from, and who made it. For instance an item made by an air elemental would be half the weight. 

 

I would also advise you to speak with your gm about working towards turning it into a magical weapon it being made from the bones of a magical creature is a great starting point. 

Not saying it should start magical, but it is a great starting point and can help define the effects of the item.

Maybe give it a minor bonus to hit elves. Since Green dragons hate them so much :P

It's flavourful, and occasionally useful, but not game-breaking.

to me a weapon from a talon sounds more like a war pick. maybe it should do poison dmg like the green dragon's breath weapon just spitballing here

 do green dragons have a resistance to acid ?

 

If so I'd make it invulnerable to acid . I'd would most likely make it that way any way because its made from a dragon .

 

Does 5e have a table for acid damge to weapons and armor ? If not I'm gona have to make one.

I would suggest something like:

 

(1) +1 to damage, and/or

(2) On a crit does a bonus d6 poison damage (Green dragons breathe poison fumes dont they?) but Quirk: bearer becomes more sly and cruel and/or

(3) Prestide/enmity bonus: those who recognise what the hammer is made from might show the PC extra respect, or enmity, depending on their view of dragons

I would rule it same stats as a normal weapon of its type, and its bonus (for being made of extra cool dragon bits) is that it is LUCKY enough to have the same stats of a normal steel weapon of its type, instead of less. 

 

If I had to go any further, I would give it immunity or resistance the dragon had, and make it easier to enchant than a normal weapon, making enterprising PCs jump through one or two less hoops to make it do +2d6 acid damage.
