I am currently running a pathfinder (dnd 3.5) game and it seems to be overly complex for my current players. My players are all brand new out of the box players. Since I have just received my 5e books the other day I feel it would be easier for them to get in to it with 5e. My question is how would I convert the 3.5 character to a 5e? Would it just be as simple as a 1 = 1 on their sheets or would it just they be better off rerolling?

You could always do an accelerated leveling track to ease them back into their original power. Play the first session at level 1, then 4, then 6 or whatever suits you.
That being said, if you think your players can handle it, I agree with AaronOfBarbaria. Just pick the class/sub-class that best fits their original vision for their character and work with them on rebuilding the character.
