Is there any detailed (3.5) information regarding Eberron's planes, apart from the chapter in the ECS? (For example: what does Xoriat look like?)
Or is this left to the imagination of the DM?

You're on the right track with Escher, except there is too much order there. Mindflayers are a native species, after all.
I always thought Lovecraft's incomrehensible, alien geometries summed up Xoriat pretty well... something more like R'lyeh, Azathoth's court, or even the hive in Aliens.
I think you captured it very nicely, it will make a good handout for my players.
I would have used a Salvador Dali painting for Xoriat something like:
