Why just come up with something of your own? Eberron is perfect for that.

A course in
"The history and lore of the Dhakaani empire"
"The eight usage  Siberys shards in medicine"
"The fauna of Xen'drik"

Dosen't matter if the subject is bogus or legit, some professor beleves he is right and teaches is works and "findings"

I'm more curious as to how these arcane universities run in general. Are they like modern universities with lectures and class schedules and such? Or is it more of a apprenticeship program? What does becoming a student at Morgrave mean?

It means.....whatever you want it to mean. As in, whatever works with your story. On the one hand, a character who has to worry about missing classes is horribly entertaining for me; on the other, a correspondence-course kind of student allows adventure all over Eberron.

I find the term 'modern' in regards to universities rather funny. There have been universities in RL for centuries and they worked with lectures and class schedules more than apprenticeship programs. Regardless, Eberron is much more like Victorian Europe than classical medieval fantasy, so I always imagines Morgraive to be like Cambridge or Oxford, although more open to the generic public (especially the state does sponsor a general eduction program).
