I want a character to exclaim a god's name in exultation upon finding a bottle of incredibly rare wine (the last vintage of haerlu wine before Halruaa was wiped out by Spellplague). If there's no god associated with wine, I guess I'll use Chauntea.

Chauntea would be a good choice for the production of wine, though it isn't one of her portfolios. I also recall hearing about vintners in some parts of the Realms who revered Lathander (if he's still alive in your game). Lliira, goddess of celebration and happiness, and Sharess, goddess of hedonism, are both associated with the consumption of wine. So, any of them would work.
Right, I would go with Chauntea as well, although Ive found references to her priests making Ale, it would make sense for them to be making wine as well. I would imagine its all top shelf stuff too!
IIRC Dionysus(Baccus) was a 'Saint' of Illmater in the earlier Realms. 1e-3e in the eastern Realms.

I recall a Salvatorean abomination called the Abbey of the St Sollars with its five-pointed star holy symbol.

How browned off would Ed Greenwood have been, gracious as he is, when the first introduction that many D&D fans would have had to the Forgotten Realms was this revoltingly un-Realmsian passage of dialogue? And that passage of dialogue gets worse.
I don't recall "St Dionysus" getting much mention in the Bloodstone modules (thankfully) but Dionysus sounds like a name RAS would use for a half-shadow dragon female drow assassin. ;)

As for Dionysus, I admit I don't know too much about him (the FR version, not the RW one). I'd be pleased if he and his peers got some face-time in the (preferably near) future.

Rather than think of them as exarchs, I would prefer to think of them as never existing. I really hope they're not in the forthcoming Vaasa article that I am really looking forward to.

I honestly and sincerely hope that all that atrocious non-Realmsian crap that was foisted upon the Realms at the beginning by careless authors and an even more careless TSR is consigned to a fiery pit of hell. One of the great things about the Spellplague is all this non-Realmsian crap can be utterly expunged.

Funny, I've only ever seen Sollars mentioned as a servant of Ilmater. Plus, BRJ isn't one to err in his research.

Guys like Dionysus and Sollars are obscure enough that most people wouldn't go digging for background history. Given the time leap, they could easily be implemented without bringing up mention of their original appearances in the Realms, especially if the Exarch hook was used. If BRJ or anyone else had any interesting ideas as to how to use them in 1479 DR, I'd be all ears. I prefer turning lead to silver or gold than discarding the lead altogether, but that's just me.
I dont even think the Bloodstone modules were originaly intended to be in the Forgotten Realms. As i understand it once TSR purchased the rights to the Realms from Ed, they just shoehorned it in there. That seems to have happened quite a bit.
Like with so much of what became the Realms, this is correct. The Bloodstone modules started in 1985 (to my knowledge), two years before the Realms became an official setting. With the release of FR in 1987, the first two modules were retconned into having always taken place in FR, the third module, which was released around the same time as the FR setting, made it official, and they became official lore. Incidentally, I believe Darkwalker on Moonshae, the first Realms novel, also predated the release of the campaign setting, by about a month or so.

As for Sollars serving Bahamut, the passage of text quoted earlier where he sounded like the previous US president (Sollars and he have something in common: they're both faux-Texans!) he then goes on to say that Bahamut is his, um, boss. No, I won't give you a direct quote. It hurt too much to read the first time. I refuse the read that again.
