Now where i am confused is when they start in the keep, or any other dungeon for that matter, should i draw out my own map for the keep? or do they just wander and when they hit a wall i tell them? im really confused please help :]

Generally we describe rooms as the players enter them so they know what exits are available. If you like, you can sketch each room as they enter it - you'll end up doing this on the battlemat for each room they have a fight in anyway.

So describe rooms like this:
The door groans as you push your way into this small room. This room smells wet and stale and unused. Cobwebs hang in sheets from the ceiling and dust floats through your torchlight. The room is cluttered with rotting barrels four feet high, and to pass you will have to walk through narrow lanes between the barrels. Beyond their lids you can see a door on the far wall and a dark archway leading north.

Then if they do something in the room and get distracted, you can remind them:
There's the door you entered through, and one on the opposite wall. An archway opens into a narrow hall leading north.

Does that answer your question?

Draw your own map, or if you google "Cartographer's Guild Keep Shadowfell" you'll find a bunch of excellent printable maps made by Lloyd B that you can just lay out on your table for each encounter.
