My group is starting a campaign off at level 5. What would the right amount of money be to give each player as if they had played to that level?

what edition?
if 3.5, then the chart is on page 135 of DMG. for level 5, it's 9000 gp.

for 4e, DMG pg 143 - 1 item each at L-1, L, L+1, + gold equivalent of 1 L-1 items, plus any/all standard equipment desired.

so, for L5, 3 magic items L4, L5, L6, and coin worth 840 gp (to spend on comnsumables and other magic), plus standard equipment
