Colossal ship with Gargantuan cargo hold means it carries cargo up to Gargantuan size.

(since Cargo is listed by tonnage, I would use tons)

pretend that each 125 cubic feet (5'x5'x5') equals a cargo ton.
Gargantuan Mecha (32–64 ft) 45ft x20ft x20ft = 18000ft^3 /125 = 144 tons

...In english? Would that mean I can fit the mecha in the cargo bay? Otherwise, I could just tack on the formchange and have it go between an assault fighter form and mecha form.

A gargantuan cargo hold can hold gargantuan objects. So, you might have some difficulty in transporting a colossal mecha.

Yes, if the Mecha is Gargantuan, then it fits in Gargantuan cargo bay.
