Unfortunately, or fortunately for us, you forgot one thing: to travel back in time so he couldn't have intented the mouse and the laptop trackpad would not have come along. No, it was 'Super', with whats his name from 'The Office' as the Crimson Bolt, I think it was HD who posted a preview for it a while back and I thought it looked interesting, but never saw it hit the theaters, it seems to have gone straight to Netflix along with 'God Bless America'. Theyre both pretty odd films, but worth checking out.

That sucks.  I bought mine at two different Giant Eagles.  They really do have an awesome selection of beer and I recently discovered that their liquor selection ain't half bad neither.  We picked up some Buffalo Trace bourbon when we got the beer, for example, and they carry Evan Willaims and Wathens (er, the one closer to my house had Wathens and the other didn't) and they've got Glenlivet and Glenmorangie - including the Nectar D'Or (my new favorite).  It's kwazy how good that stoopid grocery store is for booze.

Nope, no Food Lions either. I mean, I can get a lot of other good beer and liquor, but it seems Samuel Smith beer just isn't one of the good beers. Oh well, I'll ask around and see if I can get any of the stores I go to to order some. I might ask tonight. I'm going to a party at a friend's house, and I'm going to pck up some tasty brews to take. I'm not sure which ones, though.

Anyone have any suggestions on what beers I should take?

Im having the same trouble finding the Sweet Baby Jesus!, the closest place is in Maryland, some 400 miles away, however, the place I ussually get beer from, Belmont Party Supply, said that if I get them the name of brewer, DuClaw, I believe, that they should be able to get some in there. Got my fingers crossed, I think it was MJ who posted something about the Sweet Baby Jesus!, so really I think he should be the one to get me some, its all his fault that im craving a peanutbutter/chocolate stout anyways, curse you Mad Jack!!

Yeah, Samuel Smith' fruit beer, at least the aricot, is surprisingly good. So are the oatmeal and the chooloate stouts. They had a nut brown ale that has pretty good reviews. I ay have to check it out next time I pass by the store.

I have had the Nut Brown Ale, it aint too bad, not nearly as good as the Oatmeal Stout though.

And as far as grilling goes, I assume you mean something other than the standard 'burgers and hotdogs, Ive found that chicken is really good grilled, and you cant go wrong with steaks ,Ive yet to grill some fish but Id like to try that one of these days, I have a feeling that would be pretty damn tastey, so yeah grill some fish and let me know how it goes. Some of that Nut Brown Ale would probably make some excellent seasoning for the fish as well, although some people dont like to cook with beer as they see it as alcohol abuse or something, I am not one of those people.

Steaks and chicken for sure.  Cut the chicken into thin-ish strips and marinade it beforehand in whatever.  Chicken pwns on the grill.  I'd say fish but I'm not super into fish.  I grill it at home and I prefer it grilled but I only cook fresh caught stuff - never store bought.  Thing is, stores by you actually sell fresh caught stuff.  Only problem is they're lazy and don't filet 'em right so you'd have to clean 'em up.  I can tell ya what to do.  Anyhoo, the trick with fish is to use a foil boat and either butter or olive oil.  Put some veggies in there, too, and when the fish gets white an' flaky take it out the boat and slap it on the grill to give it a couple char marks.  Oh, and never overcook fish.  It should be pretty quick.

Grilled Salmon Steak

4 center-cut salmon steaks, at least 1-inch thick
1 lemon, halved
1 bunch tarragon, picked
2 tbsp olive oil
salt and fresh ground black pepper to taste
lemon wedges and tarragon to garnish (optional)

Pile the picked tarragon leaves together, and bruise by tapping firmly with the back of a knife. You don't want to chop the leaves, only to slightly crush them to release the oils and fragrance. Squeeze half the lemon over the salmon steaks on a plate, and turn to coat evenly. Press the bruised tarragon leaves into both sides of the salmon, and wrap the plate tightly with plastic. Place in fridge to absorb the flavors for about 2 hours.

Remove from fridge, and carefully wipe the tarragon leaves off the salmon steaks, and discard. Brush the salmon with olive oil, and season generously with salt and pepper. Preheat grill on med-high. When hot, grill for about 3 to 4 minutes per side, or until cooked. Serve with additional lemon and chopped tarragon if desired.

Grilled Halibut Fillets on Garlic Green Beans

1 pound green beans, trimmed
2 tbsp olive oil
1 tbsp butter
4 cloves garlic, minced
4 fresh halibut fillets or steaks (about 6-ounces each)
salt and fresh ground black pepper to taste
2 lemons, halved
1/4 cup chopped hazelnuts (optional)

Bring a pot of salted water to a rapid boil. Add the beans and cook for about 5 minutes, or until crisp-tender. Remove the beans to ice water, to stop the cooking, and reserve. When the beans are cold, drain well.

In a large sauté pan, add 1 tbsp olive and butter, and heat on medium, until the butter melts and foams. Add the drained beans and the garlic. Saute for about 3 minutes, tossing continually, until the beans are warmed. Do not brown the garlic Turn off heat, season with salt and fresh ground black pepper to taste, and reserve.

Preheat grill on med-high. Brush the halibut with the remaining olive oil, and season with salt and fresh ground black pepper to taste. When the grill is hot, cook the halibut for about 3 to 4 minutes per side, or until cooked.

Divide the warm garlic green beans on four plates, and top with the grilled halibut. Finish by squeezing a fresh lemon half over each plate, and garnish with the hazelnuts.

Honey Lime Glazed Grilled Ahi Tuna Fillets

2 limes, juiced
1/4 cup olive oil
2 tbsp rice vinegar
2 cloves garlic, crushed and minced
1 tablespoon grated fresh ginger
4 six-ounce Ahi tuna fillets
salt and fresh ground black pepper to taste
1/4 cup honey
vegetable oil, as needed for grill

In a bowl, whisk together the lime juice, olive oil, rice vinegar, garlic, and ginger. Lay the tuna fillets on a plate, season with salt and fresh ground black pepper to taste, and spoon over 1/2 of the glaze, turn to coat evenly. Let marinate for 30 minutes in the refrigerator. Add the honey to the remaining half of the glaze and mix well.

Heat an outdoor grill on high. When the grates are hot, lightly oil, and place tuna fillets on grill. Cook for about 2 minutes, and turn over, brushing the glaze over the cooked side. Grill 2 minutes more for medium-rare to medium. When fish is cooked transfer to a plate and brush the honey lime glaze over the other side of fillet.

Serve immediately with any remaining glaze.

Okay, you can have one more in case you want something a bit less common (at least around here).

Grilled Ginger Citrus Swordfish Steaks

1/2 cup orange juice
1 lemon, juiced
2 cloves minced garlic
1 tbsp freshly grated ginger root
2 tbsp chopped cilantro (optional)
4 swordfish steaks (6-oz each)
salt and fresh ground black pepper to taste

Note: If using frozen swordfish steaks, be sure to thaw slowly in the fridge, and pat the fish dry with paper towels before brushing with oil and grilling.

Mix the orange juice, lemon juice, garlic, ginger, and cilantro in a shallow baking dish. Place in the swordfish steaks, and turn to coat with the marinade. Refrigerate the swordfish for 30 minutes, turn over, and repeat for 30 minutes more.

Remove the swordfish from marinade to a plate, and season with salt and fresh ground black pepper to taste. Grill the swordfish over med-high heat for about 4 minutes per side, or until cooked. Serve immediately.

So what are the suggested cooking times? What cuts should I use? What fish would be best for grilling?

Fresh fish.  Get tuna, wahoo or dolphin if you can (I know the dolphin are still running in the Gulf Stream).  Thicker is typically better for the grill but it doesn't really matter.  Cooking times vary by thickness of filet but you want it to be minimal unless someone is a whiny dbag and doesn't want 'raw' fish.  Ideally you simply sear the sides and serve.  All you need to do, though, is cook until it's all white and then stop if they want to be sure it's fully cooked.  Should be flakey and moist.  Typically it's 3-5 mins a side depending upon heat.
