I boiled the manicotti pasta, and added in olive oil to the water. Drained it when finished, and let it sit. I then sauteed mushrooms, minced garlic, and spinach altogether. I used the same olive oil to saute it in. Then I took some ricotta cheese, mixed it with 2 eggs, and added chopped basil. I took the mushroom and spinach mix, and put all of it together. I took a cooking pan, and layered the bottom with pasta sauce. I then filled up the manicotti shells, poured the rest of the sauce on it, and put it in the (preheated) oven for 30 minutes @ 375 fahrenheit degrees. I also put foil on the top before putting it in. |
