Today, I made cake for my birthday... chocolate-icecream-foamcake and bananacheesecake


Technically not dinner, although the cheesecake made excellent desert. Dinner was just salad with snitzel and potatos.

Tonight I will be getting a stuffed pizza from my favorite Italian restaurant when I lived here, but I just got done eating some good Chinese at a non-buffet restaurant.

I boiled the manicotti pasta, and added in olive oil to the water. Drained it when finished, and let it sit.

I then sauteed mushrooms, minced garlic, and spinach altogether. I used the same olive oil to saute it in.


Then I took some ricotta cheese, mixed it with 2 eggs, and added chopped basil. I took the mushroom and spinach mix, and put all of it together.


I took a cooking pan, and layered the bottom with pasta sauce.


I then filled up the manicotti shells, poured the rest of the sauce on it, and put it in the (preheated) oven for 30 minutes @ 375 fahrenheit degrees. I also put foil on the top before putting it in.

I had some leftover salmon (no- it wasn't stinky) with some Spaghetti Squash- with a salad. Yum!
