So the kind of books I like to read are trilogies with gritty fighting and more grown up content.

Examples

Night angel trilogy by Brent Weeks

The First Law Trilogy by Joe Abercrombie

got any more like that?

Song of Ice and Fire series was great but it is a tad dry at times.  I am currently reading Gardens of the Moon which is a 7 on the gritty scale.

The Hunger Games trilogy is more of a YA type, but it still has gritty fighting in a futuristic setting.  If you want a longer series, go with the Dresdden Files (up to book 10 or 11 now).  The early Anita Blake, Vampire Hunter books are a gritty White Wolf-type setting; the more recent ones are almost soft-core porn, though.  :/

The Witcher books? I have little idea how the translation is going along.

14 books now and I second both The Hunger Games and Dresden files

The Malazan Book of the Fallen series (Gardens of the Moon is the first book) by Steven Erickson is great, and you're not likely to run out of reading material anytime soon - it's ten 800-page books, plus at least three other smaller novels/short story collections (by collaborating author Ian C. Esselmont) set in the same world.
The author is an archaeologist and anthropologist and the world the books are set in was originally his homebrewed GURPS campaign.

Also check out Glen Cook's The Black Company series - he's one of the authors that inspired Erickson...

I don't normally read science fiction but Black Company was totally awesome.

I hate to be redundant, but I have to recommend China Mieville.  His stuff fits the bill.  Try out Perdido Street Station.
