A Character to fit a mini

I like to paint my characters, and I like knights. Currently for 5e I'm making a set of knight oriented characters. I have a LE Warlock/Paladin who uses Polearm Master and eldritch blast, I have a NG Valor Bard who will get the find steed spell and the mounted combatant feat. I also have a Paladin of the order of ancients with the feats War Caster, Mage Slayer and Sentinal who is Wizard killer. Now I want to make a Fey Knight. Here is my problem so far.

 

I want him to ride a stag, but the Elk only has 13 hit points, and the find stead spell doesn't allow that to progress. I was thinking of making him a Beastmaster's companion, but they have to be medium in size (I really think that is stupid by the way).

 

So, how you build a character to fit this miniature.

Ask your DM to permit you to use the find steed spell as normal, but the appearance of the steed is that of a mighty elk. That's the easiest solution!

 

If you want the elk's special attacks, like charge, then you might be in for a longer haul. In that case, again you talk to the DM, explain your goal, and  work together on an ingame quest/adventure that will lead to you taming a majestic mount that fits the bill. It might take a few adventures, and a few levels, but it will likely be more satisfying.
