I kept trying to search for Action Surge and couldn't find anything, sorry if this is a repeat.

When a level 11 fighter with 3 attacks, attacks and then uses his action surge to take another action and attack again, does action surge grant him 1 more attack or does it grant him the multiple attacks that his attack action normally grants?

Say fighter attacks 3 times with 1 attack action in combat, then uses action surge to take the attack action again.  Does he get 3 more attacks or just 1?

Action Surge grants you another action - you can do whatever you can do with an action.

Since the fighter in question can make 3 attacks when they take the Attack action on their turn, using the action gained from Action Surge on the Attack action means making 3 attacks - whether you used your normal action (the one you have even when you don't use Action Surge) on the Attack action or not.

action surge can also allow you to cast 2 spell of 1 level or higher requiring an action each. So a fighter 2, sorcerer 3 could cast fireball twice in a round, then quicken firebolt (since bonus action are still limited to cantrip if you cast a spell of level 1 or higher)
