Artisan tools

So, I've got a Sorcerer Jeweler concept for a character that led me to look more closely at the artisan tools and I've got a few small issues.

The first is that the tools proficiency "adds your proficiency bonus any roll involving the appropriate tools". However, there are no rules on how to decide the DC for crafting an item, which would be the most common usage of these tools. Instead you have the crafting items rules, which require 8 hours of work a day to make things in 5 gold piece increments, no check required. So I have a prof bonus to something which doesn't require a roll?

Second part of my confusion is that there is no info on what exactly these tools are. If I get blacksmith tools am I carrying a portable forge and anvil? I hate to call the "ripe for abuse" horn, but I'm only vaguely familiar with what tools might be standard and that makes me nervous.

Some of this might be in the DMG, but is there anything else I might be missing that makes this a little better?

Well, a DC would only be required if there's something difficult or out of the ordinary about what you're crafting. In which case, just use the suggested DCs for ability checks and apply a relevant ability for it. For example, I'd say crafting a greatsword would be strength, while fine jewelry would be dexterity. Obviously, this will no doubt likely be covered in more detail in the DMG, but that would be my guess.

Also, proficiency in said artisan tools means you know how to use them properly, not that you necessarily carry them around. You may carry around a nice hammer, but you obviously wouldn't be able to carry an anvil and forge with you. That being said, I'd rule that you have access to one should you need it.
