My friends and I are about to start a new campaign in 5E. The character I created is a dwarf ranger with an AC of 14. Is there any way, besides wearing better armor or carrying a sheild, that I can up my AC?

Barkskin gives you AC 16.

Better dex, a shield or better armor is pretty much it. Though you could consider starting as a barbarian or monk instead.

Become an expert on the rules for Cover and Concealment (and warn your DM.)  Make your normal style of play such as to draw all possible advantage from the terrain and foliage.

Also note that you can Attack in the middle of your Move, which need not be in a straight line.  So you can pop out from behind a California Redwood, get off a bowshot, and duck back behind it again.  You won't be Hidden, but you will be hidden - behind an opaque solid object.
