i was reading the monks and the Martial Arts trait, it says that any two-handed or heavy propery weapon doesn't count as a monk weapon. does this mean they can't use Quarterstaffs, i'm confused lol.

or can they use Q-staffs, but only 1-handed meaning only 1d6 damage, and not the versatile version for 1d8?

Think of it like this:  if both my hands are full of quarterstaff, I don't have a hand free to punch (Martial Arts / Flurry of Blows) anybody in the face.

Or I can be even cooler than Darth Maul - whirling q-staff in one hand and my Fist in the other.

Monks are not limited to making unarmed strikes with just their fists. They can make them with any part of their body. This has been a staple in the lore for quite some time and supported by RW martial arts.
