Hello I am kind of new to DnD and have a question about damage rolls. I am a level 4 monk currently and have 18dex/15str/15con/14int/17wis/13cha. I took polearm mastery at lvl 4 for an extra attack with my quarterstaff plus my martial arts would make 3 attacks per turn? So if I manage to hit pass an enemys ac with all 3 attacks it would be 12damage minimum with my dex mod because 4+4+4+therollsofcourse? Or am I doing this wrong because it seems REALY op. Also can I use flurry of blows with a quarterstaff to make it 4 attacks in one turn?

Yes,  but check the PHB if you get to add your DEX mod to the damage with those attacks granted by Martial Arts. Its an option to change your feat, but polearm master does give you other options, like the 10 foot stopping AO, which hugely changes your options.

If your DM lets you change your feat, take +1 CON, +1 WIS instead.

^what they said. You only have 1 Bonus action so polearm master is a bad feat for monks. Boosting your odd stats would help more.

Boosting the odd stats is indeed optimal, but if you prefer feats which affect playstyle a little more directly check out; mobile, mage slayer, or even alert/observant.

You really should wait till level 8 for defensive dualist. It just doesn't do enough until you have higher proficiency.

Just keep in mind that the Martial Arts damage dice don't supersede the weapons normal damage unless it's more. So your Attack action attacks with your quarterstaff will still be 1d6 (1d8) and not 1d4. Flurry of Blows is strictly unarmed strikes, so you can't use your quarterstaff.

You only get half the benefit of Polearm Master as a Monk, so it might not be worth it. Though, being able to potentially kill a creature before it attacks you makes it something to consider.

The stat bump is definitely something to consider. As would be the feats mentioned above. Pick Mobile if you're in a combat heavy game, or Onservant if you do a lot if exploration.
