Does anyone thnik the +2 damage for 1 handed fighting is worth more than +1 AC for paladins. At adds a very minimal damage boost in the long run, and just a slightly useful damage boost in the short run.

I think that they are both relatively minor bonuses for a paladin, since +1 AC on top of plate (and probably a shield) isn't much of a difference, and +2 damage ends up not being a big deal in comparison to the additional d8s you can add to your really important attacks.

I wouldn't say one is noticeably better than the other.

Yes.  Some people do.

I'm going a dex based paladin using rapier and shield. Playing a 2 person campaign so I don't mind losing the 1 AC long run to get the ability to sneak and have a more reliable range weapon(Longbow). Just wondering peoples opinions. And coul always take the moderate armored feat for another AC if I feel I really need it. But I think my choice is oging to be  +1 AC sense if one of us goes down it'll be a big deal.

They're all good.

Personally, I'd probably opt for the offensive bump first, but I would also possibly multiclass and take a Fighter level if I wanted another style.
