When a player casts Geas, do they issue just one command to the target that lasts for 30 days, or can they issue as many commands as they wish for 30 days?

You "place a magical command" at the moment you cast the spell. You can't keep giving it commands thereafter, except by casting the spell again. Given that the duration is a month or more, and only allows one save, allowing the caster to freely change the orders afterward would be far too powerful.

This is also "historically" what a geas is: a single command/prohibition.

Of course, if the command is "Obey me!" ...

Just don't try it on a glass of water.
