Does this mean you get only one, single, attack with your weapon, or, do you get the "attack" action which in the case of a 5th level fighter, who can swing twice with with an attack action, grants as many attacks as the characters class allows?

Extra Attack only applies to the Attack action. The Great Weapon Master feat bonus is not the "Attack action", nor is it even an "action"; "bonus actions" are different from "actions." |
