How do I make a character like Inigo Montoya (http://en.m.wikipedia.org/wiki/Inigo_Montoya) from the Princess Bride? Class, options, feats, etc. Thanks.

Make a Dex-Based Fighter. Take the duelist fighting style at level 1. The solider background would probably work but you might need to change it some. As your feat for being a human, take Defensive Duelist. Use a Scimitar. When you hit level 3, take the Battlemaster Archetype.

 

Initially group with a LE Gnome and a NG Goliath and when you hit around level 10, break off and join up with a higher level Fighter/Rogue and keep hanging around the goliath.

Battle Master fighter (maneuvers to taste), Acrobatics training, Dueling style and Defensive Duelist feat, Dex-based rapier. That's all you need unless you want to really eke out every little benefit (which is appropriate as he "dedicated his life to the study of fencing") and might take an extra feat or two.

Well, he uses it like a fencing sabre, which is a slashing weapon instead of a thrusting one. That's probably why he said 'scimitar'.

Ask your DM if you can trade in your armor proficiencies for an Unarmored defense.  If the Unarmored Defense required you to be armed that would simulate the parrying and evading of blows from a skilled opponent without wearing armor.  I would suggest an AC of 10 + Dex modifier + Proficiency modifier.

I will also throw in that while for cinematics he didn't really wear armor, you can still use light armor

If your DM is allowing magic items, bracers of protection grant a +2 to ac while not wearing armor, cloak of protection gives +1 ac and +1 saves, and ring of protection can provide +1 ac

so a total of +4 

14+dex in short. It could take a while to afford it all, but it could be worth it. 

Also if you speak with your GM about unarmored defense consider making it stat based for instance charisma, or int, or wisdom. 

Possibly con as he seemed to have a lot of HP but he is also very dedicated which could be construed to one of the mental stats.

Just flavor studded leather as a stylish vest and you should be good to go.
