So, for the first time in our use of 5e, I want to multiclass. We might be overhtinking it, but we are very confused by the MC rules.

So, what happens if a lvl3 paladin takes cleric at level 4, and then goes back to paladin at level 5?

Does he get a cleric cantrip, since clerics get an additional cantrip at level 4? Does he get the paladin level 5 stuff at level 5, even though he's paladin4?

Is there no way to ever get lower level stuff from a class you're MC'd into?

You seem to think you MC by taking *specific* levels from the other classes. In truth it is the other way around. Think of your level 3 paladin as actually being a level 3 paladin / level 0 cleric. When you raise that cleric level, you get the benefits of a level 1 cleric (except for proficiencies and starting HP, since you are higher than level 1 in total). Also, while you don't get Extra Attack as Pal4/Clr1, as a level 5 character, your cantrips may be stronger (Sacred Flame is 2d8, for instance).

Also, you don't get all the cleric proficiencies (skills, armor, weapons, tools, etc.); refer to PHB p.164 for what proficiencies you do get from cleric (there might not be much gained because paladin has a lot of armor and weapon proficiencies).

Ok, so...rereading the section on multiclassing, I'm not sure where I got the idea that you took the level of a class that matched your character level. Maybe something from the playtest or spitballing articles from around that time or something?

Anyway, 3.5 mc rules, with the minor difference of proficiencies, basically. Got it. Thanks, folks.

"Right, so on the mc spellcaster table, at level 4 he'd be a level 3, because cleric is full levels and pally is half levels rounded down. I still wouldn't have any level 2 spells, though, just lvl 2 slots."

Which allows you to cast any first lvl spell you know in a second lvl slot, potentially gaining all the benefits such as higher dmg etc.

Just in case you did not notice. Which makes it very different from the 3.5 MC rules.
