This began as a joke to myself but the more I thought about it, the more it started to actually look usable! Of course, this could be sleep deprivation talking... what do you all think?

Offense:

Attack: 1d8+5

Extra Attack: 1d8+5

Two-Weapon Fighting style: 1d8+5

Sneak Attack: 4d6

Colossus Slayer: 1d8 on damaged enemies

Rage: +3 x 3 attack rolls = +9

Assassinate: Auto-crit surprised enemies

Savage Attacks: +1d8 on crits

Mounted Combat: advantage vs unmounted enemies smaller than my mount

Hunter’s Mark: +1d6 per attack roll (+3d6). 1hr, 3/day. Concentration, can't use while raging. Use when out of rages.

Follow this order: Hunter’s Mark, Rage, surprise, Attack x3 with advantage, adding Sneak Attack, Assassinate critical, Savage Attacks, and Colossus Slayer. If everything hits and crits, that’s 10d8+14d6+24, or ~118 damage! 10d8+11d6+24, or ~107.5 damage!

Defense:

17 AC with breastplate & Dual Wielder feat

Uncanny Dodge: ½ damage from attacks as a reaction

Evasion: Negate or ½ damage from dex save effects

Rage (Bear Totem): resistance vs all damage but psychic

Feral Instinct. Possible to have higher initiative than enemies even if you’re surprised, allowing you to act first and Assassinate!

Danger Sense: advantage on Dex saves

Mounted Combatant: mount basically gets evasion

Synergies:

Mounted Combatant + Sneak Attack always have advantage vs unmounted enemies smaller than my mount. If they are mounted or large, your mount still counts as an ally to activate Sneak Attack!

Assassinate + Feral Instinct to act first and assassinate any enemies that surprise you, because it's possible to have higher initiative than enemies even if you’re surprised!
Expertise: Animal Handling for mounted combat checks. Especially useful if your mount flies or climbs.

Mounted Combatant + Uncanny Dodge lets you take attacks meant for your mount and you only take ½ damage.

Uncanny Dodge stacks with rage resistance, so you only take ¼ damage.

Danger Sense + Dex save proficiency means you’ll pretty much never get knocked off your mount.

Mounts:

Giant Owl if your DM is really nice. AC 12, 19hp, 5 speed, 60 fly! Flyby! Intelligent!

Giant Lizards can be mounts. AC 12, 19hp, 30 speed, 30 climb!

Elephants are fun! AC 12, 76hp! 40 speed, huge! Dual wield whips if your DM argues about reach from atop a huge mount.

Warhorses are your vanilla choice. AC 11, 19hp, 60 speed

If I were DM'ing I wouldn't allow a mount to count as an ally within 5' for the purpose of Sneak Attack.

But Mounted Combatant otherwise is brilliant.  Never occurred to me before.

Maybe I'm reading it wrong but doesn't Assassinat only crit if you have surprise? Otherwise you just get advantage when you have a higher initiative in the first round. And it is pretty hard to surprise something when you are riding an elephant. Also you seem to have a lot of bonus actions- Rage, Hunter's Mark, Offhand Attack...
