Do undead take Critical Hits on 5th addition?

Yes. There are some other features, but this one isn't mentioned any longer. In fact, Zombies stat blocks even mention that one of their features is ignored when a crit lands.

Undead being immune to crits was a part of 3E (and earlier editions?) that made no sense.
