What is a good starting feat for a human cleric?

Observant is a good one... you can buy 14, put one of your +1 bonus points there and the +1 from observant for a 16 start. If you like any druid cantrips, magic initiate is good since you share a casting stat and can always use Goodberry. You will likely want resilient (con) at some point... lots of good concentration spells.

Magic Initiate is probably the best option then. Im going to be in the front lines a lot dealing damage, so I'll probably start with 16 con, 16 wis. Ill use a staff and take Shillelagh (sp?) so I start with 1d8+3 damage.

What about starting stats with point buy? Im thinking 15 wis, 14 con, 13 dex, 10 str, 8 int, 10 chr. Grab +2 wis at lvl 4, resilient (con) at lvl 8, +2 wis at lvl 12, then take +2 con for the last two ASIs.

Or should I take Resilient (dex) instead of a +2 con?

Definitely a strong choice. Great for Life clerics (goodberry gets boosted a lot with the Life domain and Heavy Armor with the SuperStick) and just really really good for the rest. Don't overlook the new Elemental Evil druid cantrips when you make your other choice... Frostbite v Low Con Saves and Sacred Flame v Low Dex Saves and SuperStick v Low AC; Really good reason to know what you are facing.

Need to pump up the monster identifying skills so you can know how best to attack.

And you want Resilient Con for concentration checks. Spirit Guardians can do really great things if you can keep it in place against multiple enemies. Resilient (dex) isn't as important. most dex saves are against damage, and you can heal that. Con is for concentration checks and quite a few "Save or Suck" spells.
