I'm very interested in playtesting the Psionic WoTC just released in the Unearthed Arcana. Order of The Immortal discipline to be exact. But it only goes to level 5. Does anyone have any suggestions as to where to go from there? Intellegince is it's main skill so the obvious choice is Wizard, but that seems kinda boring. Also doesn't make sense.

Anyone have any good ideas what to multi-class the "Order of The Immortal" Psionic with?

Anything that swings a weapon.

Eldrich Knight or Battle Master would synergize. So would Assasin or arcane trickster. The worst choice I think would be barbarian cause rage will break your concentration. I thought about trying a monk but needing Dex, Int, Wis all at 13 and you can't dump con of course for HP and to maintain concentration kinda made the build MAD. Same goes for the rest part from wizard which in all honesty I havnt looked into MCing those two yet.

It honestly doesnt require much in the way of intellegence if i remember right so yes anything that swings a weapon. Might be able to pair it with a ranged hunter ranger for some interesting effects maybe like volley with the weapon enhancing one or a paladin with the toughness one or a monk or rogue with quickness one. I had an idea for a warlock sorc fighter one who swapped all his extra slots for metamagic points for supercharged  quickend eb that if i went nova id get like 16 eb off

First, a pet peeve: "psionic" is an adjective. The noun form is "psionics", and the class in question is the "mystic". There's not a generic term for assorted mystics yet; in the past, it was "psionicist" or "manifester".

The comparable terms, respectively, are "magical", "magic", "[insert caster class here]", and "spellcaster".

Your thread title sounds like "what to multiclass magical with?" or the "Order of the Immortal magical", and makes about as much sense. You're looking for what to multiclass the mystic with, or what multiclasses well with psionics, or what would enjoy a psionic dip.

See how it works?

Now, with that out of the way...

If you're taking the Order of the Immortal, I second everyone here about any weapon-user except a raging barbarian. Nearly everyone will mention, say, Fighter (Battle Master or Eldritch Knight) + Psionic Weapon, but I prefer Assassin + Celerity as an example instead, because that single discipline improves nearly anything the assassin could want during crunch time (even out of combat), and it isn't so entirely centered on the numbers game that Psionic Weapon is.  Do note that the MAD concern isn't as tough as it seems; Immortals don't risk disrupting their concentration on disciplines from damage; you just need Con for the HP, really. (Incidentally, the need for high HP is relaxed somewhat thanks to Iron Durability and Psionic Regeneration. And if you MC into a class with plentiful HP to begin with, especially Fighter, Psionic Regeneration is just mean.)

If you're going Order of the Awakened, the best matches so far seem to be any cunning spellcaster (illusionist, Fey warlock, etc.), with Conquering Mind or Third Eye being preferred as a toss-up. Note that the Awakened can speak with any creature with a language thanks to Awakened Mind, and does so absolutely silently. As such, my suggested Awakened multiclass is Arcane Trickster. (I suspect the arcane trickster will have a field day with the Order of the Invisible Hand when it shows up.)

In either case, unless you plan on outright attacking with your disciplines, you're not going to need that much Intelligence. If you rely on Psionic Weapon or Celerity, for instance, you just need the 13 Int to multiclass, and that's attainable pretty easily if you pick a +Int race.

Incidentally, I don't believe pure spellcasters are good multiclass options for those who wield psionics. (This is a place where "psionicist" or "manifester" would be used.) This is because pure spellcasters' tactics center around "what am I concentrating on?", and most of their strongest spells require concentration... as does every single psionic discipline. That's why I'm suggesting classes like Assassin, Arcane Trickster, Eldritch Knight, or Battle Master - they don't rely on concentration and can easily afford the Int to multiclass. (Note that fighters and rogues get more Ability Score Increases than any other class.)

While reading it for the first time, I kept thinking it would be awesome to multiclass with a monk.  The Strength of Mind and the Third Eye feel very martial arts-like to me.

Hmm...

Immortal 5/Battlemaster 12/Assassin 3

20 dex halfling with crossbow expertise + archery style....

3 attacks + 3 action surge + crossbow expertise = 7 attacks, all crits.

0.9375 accuray (+ a little for lucky) * 7 attacks = 6.5625 hits.

6 * 5 points each = 30.  Enough to spend all 27 psi points.

2d8+5 * 7 * 0.8775 = 85.995

+5d10 * 2 = 55 battlemaster dice.

+2d6 * 2 = 14 sneak attack

+27d10 * 2 = 297 leathal strike.

451.995 nova.

Not too shabby.

Oh, I read the v2 just now, I see they fixed a couple problems. You can still multiclass into this to get a 3rd save proficiency. You would be daft to ever start as a Psion.

They still haven't put up the multiclass prerequisites. They'll probably make it 13 intelligence and 13 charisma. Something to blunt the curve. They still need to address the unarmed strike silliness in the article. I have a feeling none of these people talk to each other.

Anyway to OP, if you want to abuse the crap out of Psion while you can, make a Circle of the Moon Druid. None of these disciplines are spells so you can use them while shapeshifted, and you'll be able to use a bear's multi attack twice with Celerity, or increase your natural weapons and smite with Psionic Weapon.  Take some more multiclasses for a fighting style. Ranger may be a decent pick for the Fighting style (Mariner) and Path damage bonus.

...Why is it that people think "4 classes in 1" is broken at the table?

It's the same problem as me looking at the wizard and seeing eight classes in one, or the rogue and seeing three in one.

While the CLASS can be realized in a number of different ways (two subclasses currently presented, but not all Immortals will play the same, for instance), any individual CHARACTER will manifest in exactly one way.

The only thing that's different here is that the subclass does a greater deal of lifting for mystics than it does for, say, barbarians.

We had a similar problem in 3.X. Sorcerers had access to the entire, vast, wizard spell list - but any individual sorcerer knew at most 34 of them, in rigid level-locked numbers (i.e. no more than 4 4th level spells, despite there being lots of awesome 4ths to pick). The class itself had a huge range of flexibility - but any individual sorcerer did not, and actually felt really restricted.

The same basic thing is at work here.
