15th level gestalt
8 feats for leveling

starting array for ability scores 18, 17, 16, 15, 14, 13

6 points to add to ability scores (split as needed)

+1 to all ability scores

all books avaible

im thinking of making a spellcaster type melee character that fights based on touch spells and i want healing capabilities as well as perhaps turn undead.
i was thinking 1 level of fighter (armored mage)
14 or 15 levels of wizard

then maybe cleric or paladin for the rest

There's so much of that I don't want to touch but the one thing I will point out is that the "Armored mage" variation of Fighter depends on the fighter level when it comes to ignoring ASF.  I'd need to review it but a Fighter 1 with that variation may get to ignore ASF for 1st-levels spells but that is it.

And why wouldn't duskblade work for one part of the progression? It fights, it uses touch spells, and it does both admirably well.

As for healing, you don't need it. It's that simple - you heal out of combat when it doesn't eat up your precious time.

As for Turn Undead, you will never use it except to fuel divine feats. If that's not your thing, then you won't use Turn Undead at all.

As for your feats and ability scores, as I told you before, your excessively liberal DM has completely changed the way that feats and ability scores are judged, so I can't help there at all.

My first stab at this would be Duskblade 15 // Factotum 15. Duskblade gets you full base attack, weaponry, bypassing ASF, and touch spells, plus the ability to fight and cast at the same time. The factotum gets you extra Intelligence synergy, outstanding skills, access to Turn Undead if you really really need it, light emergency healing, access to more powerful out of combat healing through wands, and several free-action augments to your overall combat prowess. In terms of feats, the basic duskblade preferences for Power Attack, Knowledge Devotion, and Arcane Strike are all solid feats for this approach; since your other half is factotum, if in doubt, you can always pick up more Fonts of Inspiration and put them to good use.

I'd go Paladin 15//Battle Sorcerer 15. Maybe go into grey gaurd if you want/your DM is into atonment for paladins.

As for the undead, take command undead and spam it every round of every combat with them. Now you have a cadre of loyal vampire body gaurds.

Stats - Cha > Str > Con > Dex > Int > Wis. (ish)

Don't bother wasting time healing, but if you really have some dead (-1 to -9) allies, hit them with lay on hands.

If you don't want to be in melee with this build, simply don't. Ride around on your paladin's mount (some sort of winged thing far away from monsters) and blast spells from above at people.

ranged caster or a melee weapon
