Don't have the book, but got spoiled online.  Here's how to build and craft stuff, the mundane way:

Checking the d20 SRD, crafting stuff usually took a few weeks.  But if you wanna make plate armor now, it's going to take you the better part of a year.

And the magical way.

Yeah.  Take 300 days to make plate armor, or, provided you get profiency with artisian's tools, make it instantly.

Why is plate armor so expensive if any 7th level wizard can create a few suits per day from some cheap raw material? The world should be flooded with plate armor pushing the supply way up and the price way down.

Also, why would anyone ever become a craftsman? Spend 300 days to make this suit of armor that you can sell for 750gp profit, or do it in 10 minutes.

Fabricate is a 4th-level spell.  That means being a 7th-level Wizard.  That Wizard can kill an elephant on his or her own, and with a friend or two of similar power, has been taking down giants already.

That's not the sort of individual that drives the market, and to get to that level, you need 23,000 experience points – most people who choose the incredibly dangerous life of adventuring retire after 300-900 experience.  Also, getting going as a Wizard adventurer is hard if you don't have a tough buddy to protect you.

My point is, it may be ultimately cheaper to fabricate tons of suites of platemail, but the expenses and risks of adventuring that long before you can cast fabricate are just too risky.  Being an artisan and taking the 300 days to craft it is much safer.

Besides, there aren't that many 7th-level + Wizards in the world, and the ones there have other spells to cast.

'Cuz the 10 wizards in the world at level 7 or higher have better things to be doing.

Now that evil necromancer outfitting his pickled skeleton army only needs a few months and ...

You guys do realize that there are multiple level 9 Mage NPCs in the adventures. I think you are way off regarding how common spellcasters are in D&D.

I dont use those adventures in my campaigns. Magic is a bit more rare and folk tend to be suspicious of it.

Until we have a new DMG, I'm using the numbers from the AD&D DMG.

For a breakdown of what levels you can expect in a kingdom, check out this article:
