Necromancers and the MM 'Animated' Undead et al

I am intrigued that there are other types of zombie and skeleton in the MM but dissapointed that there is no way for the Necromancers to create the variants of these two monsters.

 

Surely the Animate Dead spell should have included the flexibility not only to make larger numbers of basic zombies and skeletons, but lower numbers of more powerful variants?

 

And the Crawling Claw is created by necromantic rituals... which no necromancer in the system knows according to RAW...

 

I hope the DMG has the rules for expanded undead creation, not to mention summoning abilities that cover demons and devils - or what is the point of Iggwilv's advice on how difficult demons can be...?

The DMG may include those, as it fits with some of the other DMG options like the Death cleric domain, Blackguards, Warforged, and other "DM choice" options for players that are more likely to be limited in most games by the DM so they decided to leave them out of the PHB.

I suspect the DM will have a wider range of necromancy and a conjure fiend spell, which will probably be more like conjure elemental or fey than conjure celestial (if you lose concentration your demon will try to eat you), hopefully something like you can summon a fiend 1 CR higher than you could with a similar conjure elemental spell (CR 6 with a level 5 spell slot to CR 10 with a level 9), but when you do, you suffer disadvantage on con checks (at least that is the houseruled spell I am allowing) as long as the fiend is on the plane you are on (planar binding can make for a long day).
