What do you guys think, with the 3 combined (Shillelagh, Quaterstaff, and Versatile) should the Staff's damage go to d10 in two hands?

No. The d8 bump is due to magic, so it should not be available for more changes. When using polearm master and shillelagh ... is the off hand damage die still d4 or should it go to d8 as well? now that's a good question.

But the wording on the spell says the weapons damage dice becomes a d8, verstile allows you to use a weapon in 2 hands for increased damage, it's a bonus for the staff, are you saying that the spell nullified the staffs bonus? But I do like how you think, but it says the off-hand end of the polearm is treated as a club, not is a club, the spell targets a staff or club only

I hate the way shillelagh and quarterstaff interact for an entirely different reason. I hate the image of a druid wielding a quarterstaff in one hand and a shield in the other. I don't have the PHB, but unless something has drastically changed since the playtest (always a possibility) that's pretty much the best option for non-wildshaped melee druid. Even if a club does as much damage with the new shillelagh, a quarterstaff is still more useful for other purposes (ie--it's a 6' pole). I wish there were some sort of disincentive to use quarterstaff and shield, but I'm not expecting there to be.

I'm a fan of changing the quarterstaff properties to "Finesse, two-handed," as a change that works well for interaction with other simple weapons, as well as for monks and wizards.

It's a quarterstaff not a full staff, it is not a reach weapon, they are about as long as a longsword, It's pretty much a thick walking stick. It is not a 6' pole, maybe around 4'. That was a mistake that has been around in dnd for about 30 years lol
