Would it be imbalanced to alter the Unarmoured Defence class feature of the Monk to: 10 + Strength modifier + Wisdom modifier?

Unbalanced? Probably not. But it might open up some odd interactions, close up some other (favorable) ones, and force people to ask questions why it works that way. I mean, yes, Dexterity and Strength are on the same scale - but they represent different things. Why does taking armor off mean that monks (and only monks) get harder to hit if they're clumsy and musclebound?

Honestly, it would probably make the class weaker, because then they wouldn't get to use a single stat for AC, attack and damage rolls, and initiative.

 

(I really do not like the treatment of Dexterity/finesse in 5E.)

It has actually gotten better. 2e was by far the worst edition for dexterity as a god stat.

 

In 2e, dex boosted AC regardless of armor. Secondly, dex reduced the to-hit penalty for dual-wielding, which since like everyone dual-weld, functioned the same as a bonus to hit. Thirdly initiative was king in 2e since monsters had crap for HP; and since it used d10s, the dex mod was more significant. Lastly strength boosting items were extremely common so a fighter with a low strength just needed to wait a little while (dex items existed but were rarer).

 

The later editions improved this a lot. Heavy armor is slightly better than light armor with 20 dex, and two-handed weapons are not allowed to be finesse (quarterstaff monks notwithstanding).

 

Also you can take a look at Hero System, d20 Star Wars, or Legend of the Five Rings for some perspective. It could have been a lot worse.

Yes but if your using a 2h weapon you're not using Dex for it. Hence (I assume) why the sentence started "One of the costs to using DEX".

To emulate a monk-style "iron defense", what about using Constitution instead?
