How do we determine the CR of enemies that are normal humans or demi-humans with normal levels in one or more character classes? Have I missed where this information is detailed?

I'm not sure if it is detailed specificly, but there are a few notable examples.

Acolyte has the spells of a first level cleric, but no other abilities and no armor.

Acolyte is rated as Challenge 1/4

Priest has the spells of a 5th level cleric, an ability that is sort of similiar to priest domain abilities, and 5d8 hit dice.

Priest is rated as Challenge 2

The guidelines from the "Monster Statistics by Challenge Rating" table on page 274 of the Dungeon Master's Guide seem like they'd work just as well for estimating a character built as a PC as they would for a monster.

Some adjustments could be done by comparing class features to the abilities listed in the "Monster Features" table on pages 280-281. A 1st level fighter, for example, would have about +6 effective hp from Second Wind and something like either a +2 effective attack bonus, +2 effective damage, or +1 effective AC from their chosen Fighting Style.
