Say I have a 5monk/1rogue. Monk get 2 attacks per action plus 2 attacks for flurry = 4 attacks.

If I roll : hit, miss, crit, hit

on the attack rolls can I choose the crit as my sneak (obviously to maximise damage) or do i need to declare after each "hit" roll which will be the sneak attack?

I can't answer this. This is something you'd have to ask your DM. In some groups, you can roll all of your attacks simultaneously, in others, it's one after another. I think it's up to you to determine which of your attacks can gain the sneak attack, since it's an accuracy-based ability and your character would be able to choose where he's striking to deal the most damage. That's my take on this, at least.

I make my players declare each of their attacks before rolling. Personally, I think that's good manners. I like players who make my job as DM easier by rolling one attack* at a time and letting me rule on it before doing the next one. It can go quick once everyone gets used to each other.

For sneak attacks, remember the description says "you can deal an extra 1d6 damage to one creature you hit with an attack ..." This means you must have hit with that attack before you can roll your sneak attack damage. So roll base attack, let DM say whether it hits, then roll sneak attack.

Just my opinion though, it would be between you and the DM.

*Note I am OK with a player rolling the attack roll and their damage dice for that specific attack in one roll. I consider that an "attack" in this context.

Furthermore, you can't sneak attack with unarmed strikes. They aren't finesse weapons, even with Martial Arts. (The recent Modifying Classes article showed that this was deliberate).

I believe that, despite procedures often used to accelerate gameplay, the intent is to roll each attack you make in serial, rather than all at once - so you would not know that your next attack is a critical hit rather than a normal hit, just that it it could be, and are assumed to be making your choice to use sneak attack or not under those circumstances.

Of course, your DM may decide otherwise - especially if already deciding that your unarmed strikes using Dexterity on attack rolls and damage rolls is sufficient to fulfill the requirements of sneak attack despite that by the letter of the rules it isn't.

Agreed with those stating attacks should be resolved one at a time. Food for thought, how would you resolve the simultaneous attacks if the first attack damage was sufficient to kill the target? Forcing the remaining attacks upon the same target would be a trade-off for crit fishing, though I'm not sure it's a balanced trade.

My Monk2/Rogue1 will roll for multiple attacks at once and apply Sneak Attack to the first thing that hits.  (context: AL at Conventions)

If I think the target is already bloodied, I roll attacks one-at-a-time so I know when I can change targets.

Nobody has yet objected to me that Martial Arts can't carry SA, but I acknowledge the point and can tie SA to my Weapon attacks.

The "speed demon" method I describe is for ease of play and hastening my turn, not to pull a fast one on the table.  If the DM objects, I'll adapt to his methods.

one at a time by RAW
and it's best to use it right away, and not hope for a crit.
