Hi there

Does Eldritch strike only apply to "new" spells or can an Eldricth knight cast hold person, and keep up the save disadvantage on the following saves by keep attacking the target and applying Eldritch strike every round?

 Nice idea, but no.

It would also be fun with my Fighter/Magic-User/Cleric (EK11/War Cleric 9) build. Use it with Contagion, even if your DM doesn't like broken things and rules that the disease doesn't take effect until three saves are failed. The target still gets disadvantage on the saves and you don't even have to choose Slimy Doom. Maybe opt for Flesh Rot and vulnerability to all damage, especially for bosses that are immune to stun. Good times!

(Granted, if your DM doesn't like broken things, he's probably not going to be any more enthusiastic about this than RAW Contagion...)
