Please someone with a PHB tell me that there's a rule against stacking bonus movement, like from the Monk's & Barbarian's abilities and the feat?

Define "bonus movement" a bit more celarly and I might be able to help you out...

Yes, those all stack.

By 7th level, a wood elf barbarian/monk that has invested a feat into being faster can just barely out-pace a riding horse.

Why, in a fantasy game, would their be restrictions preventing that?

Its a 4 minute mile, I believe.

Oh man... I totally forgot about Haste! 520 feet per round, right? 65 ft. speed x 2, with movement and 3 Dash actions. Can our Monk / Barbarian / Rogue / Sorcerer keep his concentration long enough to run a 1:00.9 mile, folks?! Stay tuned! :P

Edit: Equal level Wizard just teleports to the finish line in the blink of an eye. "What took you so long?" Haha.

Can't warlocks get teleport 30 at-will?

Or was that eldrich knights?

This of course is assuming that you could do dash for multiple rounds.  If a dash is more like a sprint, then it's not that far out of line (but still really fast).  On the other hand it would be a DM call whether it's ok to dash for 50 or so rounds.

I'd expect a few con checks vs. exhaustion to maintain sprinting speed over marathon distances. But, I wouldn't ban it or house rule against it.

Sure, anyone should need to make checks to run a long way. But that still leaves rogues running 50% faster than anyone else.

Add in a Transmuter's Stone for an additional 10-ft. of movement. That's 75-ft. unhasted.
