Question 1: is there a consensus (if not an official ruling) about adding ability modifiers to unarmed strikes of non-Monks? I had assumed that a character would, but there was an argument in an Adventurer's League game and I'm wonderin if I'm wrong.

Question 2: what happens to animated armor when it is reduced to 0 hp? Does it disintigrate? Can the pieces be recovered/salvaged? More importantly, if the pieces can be recovered, can they be repaired (as with the mending spell)?

1: There is no rule which gives an exception to the general rule, which is that you add your ability modifier to attack and damage of all normal attacks. A fighter with +3 Strength will deal 4 damage on an unarmed strike, assuming he has no relevant feats or other features.

2: It's up to the DM. Personally, I would allow them to be repaired into a usable suit of armor. I would probably set the repair cost at around half the normal retail price of plate armor.
