Let's say somehow I was able to get blade pact and sheleligh to key off cha somehow n pick up the invocation that added cha mod to dmg how would the dmg be calculated? Let's say I have 18 str n 16 cha n let's say a + 3 prof cause I'd like to know if I could use any of my str for this calculation. Also since quarter staff is versatile does that mean I can use it 1 handed

This is a confusing question, but if you want to use your Str with a melee weapon, you can. If you're trying to get both Str and Cha added to damage, I don't think that is easily possible.

You can use a quarterstaff in one hand, for d6 damage.

Yes no matter what, you can use a quaterstaff in 1 or 2 hand has you want (1 hand deal 1d6, 2 hand deal 1d8)

If you use Shillelagh only, you will add your Cha only. and using the weapon in one hand will still deal 1d8+Cha

If you take the Invocation hat allow to add your Cha without shillelagh then your quaterstaff will deal in 1 hand 1d6+str+cha or with 8 hand 1d8+str+cha

If you use both Shillelagh and the invocation then your quaterstaff will deal 1d8+cha+cha no matter if you 1 or 2 hand weild the staff.

There is no Invocation that adds Cha modifier to melee weapon rolls; however, there is an invocation that adds Cha modifier to ranged spell attack rolls from the Eldritch Blast cantrip.  This invocation would not modify an attack made with a Quarterstaff, even if you had your Pact weapons manifested as a Quarterstaff.

If you use Shillelagh, it will allow you to use your spellcasting score in place of STR for the attack and damage roll with an affected quarterstaff or club.  The only way to get Shillelagh to use Charisma as your spellcasting score is through the Pact of the Tome pact, which means you are not getting a pack blade, or by being a certain level of Bard.

However, in the event that you have Shillelagh and are using it with Charisma as the spellcasting score and are using a Quarterstaff with it, you will be using Charisma for the attack roll and damage roll, in please of Strength.  So, 1d20 + Charisma modifier + Proficiency for attack and 1d8 (one-handed or two-handed) + Charisma modifier for damage.
