Just a quick newbie question.. what does "PEACH" mean when I see it on the forums?

Please Evaluate And Critique Honestly. A largely redundant label stating you're looking for an opinion on whatever you're posting.

And thats all it really is, a nice way of saying "Hey I won't freak out if you critique my work, and I am looking for help if you have any to offer?"
