Spell Sword/Soul Eater?

Some friends of mine who play AD&D have asked me to help write a campaign. They think I'm a better story teller than the current DM but I know very little about this game and so I need your help. I'm trying to convert a character I used in another RPG to this system for a part time PC and ultimately NPC villain.

That character was an exceptional duelist and warlord who absorbed the life force of his slain enemies. For most of his career (I used him for six years) he was horribly opposed to using magic and magic users but in the final year he did embrace some necromancy (exclusively for leading the undead on the battlefield and as a path to lichhood.)

My only concern is trying to do too much and therefor not being capable of any thing. So... how do I build this character?

A level 8 Soul Eater level 8 Spell Sword, level 2 Fighter, level 2 Wizard?

A level 1 Soul Eater, level 10 Spell Sword, level 4 Fighter, level 5 Wizard?

Well your first build there isn't really legal because you can't get into Souleater or Spell Sword with only 2 level of Fighter and wizard, as both PrCs require either a BAB or +5 or +4.

Dread Necromancers from the Heros of Horror splat book sound like they are the prefect package of what you're looking for, they raise armies of undead, cast necromancy clerical spells, and become a lich at 20th level.

The Level Drain could simply be a spell he always has active or a magic item.

Also since your shopping around: The Necrotic Focus weapon enchant from Libris Mortis allows you to channel level draining abilities through Weapons.

Lastly the Smiting Spell metamagic feat (or the Duskblade Class) both from Player's handbook II allows you to pretty much do excatly what a spell sword does.
